Today though we're making it the star of the salad.

We've got the crunchy slaw plus crunchy snow peas, cherry-red pepper and matchstick carrots.
We've also got some spinach to add a niggling bulk to the salad, plus some rotisserie craven to make this a full repast.
Plus, the homemade soy-ginger dressing that tops this off is crave-worth on its own.
Information technology's one yous've seen effectually here before and information technology'southward a serious favorite of ours. Information technology's and then darn tasty!
(I use it in warm Asian quinoa power bowls, Asian chicken chopped salad and edamame, carrot and cucumber salad, among others.)
Yup, I'g mildly obsessed with this salad. I keep making information technology for lunch and eating all of it myself over the course of a few days.

Make-alee notes for broccoli slaw salad with chicken:
- If y'all desire to meal prep this salad, mix together the salad ingredients and put them into your container. Add together the green onions if yous are using those.
- And then mix up the dressing – I use a small jar – but go along it separate in the fridge.
- When you are set to eat, or in the morn when y'all're packing your tiffin, mix the dressing into the salad and add your peanuts.
- Keeping the dressing and peanuts separate ensures that everything stays nice and crunchy.
Yous tin too brand mason jar salads with this.
– I put almost 1/4 cup of the dressing in the lesser of a standard 16 oz. jar. (Like these.)
– Then layer the mixed salad on summit of the dressing and identify the green onions at the very top of the jar.
– If you are going to swallow it in the adjacent ane-2 days, you can go ahead and put your peanuts on elevation too. Otherwise, I'd keep them split up so they maintain their crisis.
Voila, healthy lunches ready to go for the week!
Then when you are ready to eat, dump the salad from the jar into a bowl and the dressing comes out on top. Mix information technology in, add together the peanuts and dig in.
Substitutions for broccoli slaw chicken salad:
– I use rotisserie chicken but you could sub in some leftover grilled or roasted chicken if y'all accept some on hand. (Or make Instant Pot shredded craven.)
– You could fifty-fifty change up the protein and use grilled or roasted fish or thinly sliced pork. Canned tuna would work too.
– Red bong peppers take slap-up sweet – and await pretty too. Nonetheless, you could use another color bell pepper if y'all prefer.
– I highly recommend the bootleg dressing, and it takes merely minutes to measure everything into a jar and mix information technology up. But you could substitute your favorite store-bought Asian-manner dressing if you prefer.
– Slivered almonds would be a adept substitute if you don't desire or can't have peanuts.
Lastly, if y'all tin can't buy the premade broccoli slow, so offset, I'k and so sorry. But also, here's what to do for bootleg broccoli slaw:
Shred a modest head of broccoli (the florets and stem) using a box grater, then add together a fiddling bit of thinly sliced red cabbage. You lot'll desire about 3 cups full to equal the amount in a store-bought purse.
Nigh bags of broccoli slaw also accept carrots, but since this recipe uses some, you lot can just skip that role.
So now you lot're all caught upward and set to go.
I promise you give this broccoli slaw chicken salad a try. It'due south so addictive and I think you'll be equally smitten with it as I am!
